Smell: A Master Roaster certainly cannot afford to catch cold. The various stages of roasting give off different aromas which are another guiding sense for the Roaster.

Touch: From the dry toasty feel of a light roast to the oily smooth touch of a dark roast, the “feel” of the coffee beans determines the perfection of the roast.

Taste: Although the roasting process doesn’t require the Roaster to brew the coffee to check the taste, the process and method are predetermined to achieve the flavor from the beans being roasted depending on their variety and origin. A light roast to highlight the origin characteristics, a medium roast to reduce the acidity but still maintain the origin characteristics,  and a dark roast for a dominant roast character.

Sound: Similar to the popping of mustard seeds,  in the roasting process where the moisture escapes during the light frying stage, the coffee beans have two distinct stages of popping. The first stage takes place after several minutes of roasting when the green beans pop or make a cracking sound known as the “first crack.” This is the stage of a light roast. The medium roast is the in-between stage.  Further roasting of the beans results in a dark roast and the beans begin popping again. The oils rise and coat the surface of the beans.
